Zucchini Pad Thai

This Zucchini Pad Thai recipe is easy and tasty! A great way to keep thai food even when gone raw. This recipe makes 2 – 3 servings.

 

Zucchini Pad Thai Noodles

Ingredients

  • 4 cup spiral zucchini
  • 1/2 cup spiraled or shredded carrot
  • 1/3 red pepper sliced very thin
  • 2 tablespoons lemon juice.

 

Instructions

  •  Spiral carrots and zucchini and mix with chopped red pepper in a bowl.
  • Pour the lemon juice over the  noodles, mixed it all around and let marinate.

 

 

Zucchini Pad Thai Dessing

Ingredients

  • 1/2 cup of fresh orange juice
  • 1/3 cup fresh coconut meat
  • 1/2 cup cilantro
  • 1/3 cup chopped scallions
  • 1 1/2 Tbsp raw tahini
  • 2-3 leaves of fresh sage
  • 1 quarter sized slice of ginger

 

Instructions

  • Pour all the dressing ingredients into a blender and mix until creamy.

 

 

Zucchini Pad Thai – putting it together

Pour the dressing onto the noodles and mix it all around. Let sit for 15 minutes to let the noodles tenderize.
